At the age of 9, the “Star Wars” actress began living vegetarian, and Jonathan Safran Foer’s “Eating Animals” encouraged her to make a permanent move to veganism when she was 30.

Now the star cooks like Jennifer Garner and posts her favorite recipes in Instagram videos. In a video for Munchies in 2018, she posted one of her favorite recipes to prepare for her family, and Portman’s recipe for a spicy chickpea stew is a perfect vegan starter dish for anyone interested in making the transition to a healthy diet.

The rationale of Portman for converting to a vegan diet is simple: for the world, it is safer.

As the actress detailed in the Munchies video, she was influenced by Foer’s “Eating Animals” to follow a sustainable diet. She created the documentary of the same name and narrated it.

Here’s how to cook vegan spicy chickpea stew for Natalie Portman.

First, over medium-high heat, heat the olive oil in a large skillet.

Add all the garlic and zucchini and stir until the garlic is fragrant, stirring often.

Then, apply and lightly smash the undrained tomatoes with the back of your stirring spoon.

Then add the main ingredient – the chickpeas that have been drained and rinsed. Season and bring it to a boil with salt and red bell pepper flakes.

Lower the heat to a simmer until the stew is boiling.

Cook until the mixture is slightly thickened and recognisable as a stew, stirring occasionally.

It’s going to take 25 to 30 minutes. Cook the rice while the stew is simmering. Serve the stew over the rice and garnish with fresh parsley until both are finished.

In the video, Portman noted that although it simmers, she likes adding extra salt, and she also likes it really spicy, so add as much salt and red pepper flakes as you want. For vegan dishes, nutritional yeast is also a fantastic topping. Without using animal goods, it has a Parmesan-like texture.
